I'm only posting this because the GF had such a positive reaction to it and she's not someone who usually cares much about what food gets put in front of her. I have to admit it was much better than I thought it would be when I slapped it together. It's a super quick recipe (presuming you already have smoked pork on hand ) and I only was able to make it because the GF bought canned chili in the pre-lockdown buying frenzy. I don't think we've ever had canned chili in the house before this. So, here it is...
3 cans Hormel chili with beans (no beans is OK, if that's your bag)
1 medium onion diced finely
2 handfuls of pulled smoked pork
combine and simmer for ~15-20 minutes.
It feels doubly blasphemous to eat chili with beans and adding hoemade pulled pork to canned chili but we do what we have to do in these uncertain times.
