Here's a go to recipe for a helles. 

 

7.5 gallon pre-boil, 6 gallon post boil, 90 minute boil. 

 

10# Avangard (or your favorite imported) Pilsner 

.75# Wyermann (or your favorite imported) Lt Munich

.25# Melanoidain (optional, but I like the malt profile it gives in this beer) 

 

Water profile for strike and sparge water, units are ppm.

 

Cl:  18

Mg:  8

Ni: 6

sulfate: 18

choride: 36

Bicarbonate: 66

 

my water doesn't lend itself well to lighter color/flavor beers; useally have to cut the water with RO at 50% and add minerals to suite. 

 

mash 152*, with a 168* mash out. target mash pH was 5.2, but this came out to 5.1. 

 

hops: 1oz of Hallertau @ 5%. (5 HBUs) at 60 minutes. 

 

yeast: use your favorite Bavarian lager yeast. I used WLP830.

I see two mineral entries for chloride. 

 

Is one of those supposed to be calcium, and if so, which one?

the first entry is calcium. i gotta stop trying to remember mineral appreciations when i first wake up. thanks for pointing that out.

Thanks so much for sharing! I think I'm going to try one with what I have on hand now, but my next visit to the LHBS I'll pick up some hops and malt!

Hey Lefty, I brewed up this batch and just transferred from cold crashed and carbed fermenter to my serving keg. My wife and I have been trying to cut booze during the week, so I can't pour a proper pint right now, but tomorrow I'll load a pic to the Post-a-pint thread. 

 

I did take a sip though. It's seriously good.
