Vienna Pale Lager

I have two needs right now.  Number 1) to start using up the huge amount of Vienna on hand and number 2) to have a smooth yellow lager on tap.  I'm "Ken-oodling" my recipe design and am open to suggestions.  Hoping to brew next Friday.

 

I'll be using a fresh cake of 34/70 (slash) S-189.  I used a pack of each for my 70/30 Pils-Munich Lager and the taste in that beer is divine.

Estimated OG: 1.062, 6.7 SRM, 25.7 IBUs, Boil Time: 40 Minutes

12 lbs            Vienna Malt (3.5 SRM)     
8.0 oz            Carahell (12.7 SRM)              
8.0 oz            Corn, Flaked (1.3 SRM)       
0.50 oz           Magnum [14.50 %] - Boil 25.0 min        17.8 IBUs   
1.50 oz           Saaz [3.00 %] - Boil 10.0 min          5.8 IBUs    
1.00 oz           Saaz [3.00 %] - Boil 5.0 min            2.1 IBUs    

Mash Schedule: BIAB, Medium Body

I would lose the corn and then save the Saaz for something where you really want it (like a Staropramen or Pilsner Urquell clone) and use something like Hallertau, Tettnanger, Hersbrucker or even an American noble instead.  Otherwise... drool.

I love all the Vienna.  I have done this before but not often because I typically don't keep insane amounts of Vienna on hand.  I don't think I've ever bought a full sack of Vienna... just 15-20 pounds here or there.  This might be something to try when I get my Staro yeast up and running... all Vienna with some carafoam or carahell, a shot of hops at 30 and then an ounce or two late.  Sounds like beer heaven to me.  :D
