Easy Vegan Chili

This is phenomenal, tastes like chili, not vegetable soup

 

1/4 cup olive oil

2 cups trinity, frozen

1 pound mushrooms chopped in food processor to consistency of cooked ground beef

1 can Ro-Tel tomato and green chili, NOT drained

1 can Ro-Tel tomato and chipotle, NOT drained

1 can kidney beans, drained and rinsed

1 can black beans, drained and rinsed

1 can fire roasted chopped tomatoes, NOT drained

1 can pumpkin puree (NOT pie mix unless you like Cincinnati chili)

2 cups frozen corn

3 cups vegetable broth

1 little can tomato paste

3/4 cup TVP

1/4 cup sugar

1/4 cup soy sauce

1/8 cup nutritional yeast

Your favorite chili seasonings, I use two packets of packaged McCormicks

 

I put everything in the Instapot for 30 minutes on high manual with a 15 minute natural release.  If you don't have an InstaPot, you could do it for a few hours in a crock pot or Dutch oven.

 

 

Actually you can take any of your favorite chili recipes with beans and replace the meat with the mushrooms, TVP, pumpkin, soy, and yeast.

Canned mushrooms aren't good for anything at all.

I've got an improvement on this now.

Replace the pumpkin with 2 small zucchini, small dice - about 2 cups. They will break down and thicken.

Drop mushrooms to 8 oz and add a cup of walnuts, ground small in processor.

Replace packaged chili mix with 4 teaspoons each ground cumin and chili powder. Add a tablespoon of Dutch process cocoa.

I've been leaving out the TVP recently, too, and not missing it.

I’m sure the walnuts make up for the TVP. I may give this a shot soon, my wife is always bugging me for something like this

Tvp always gives me tons of gas. For something much better, but more expensive, you can try this stuff called Marjan crumbles. They have it by the tofu at our publix.
