Banana Bread

2 ripe bananas
2 large eggs
1/2 cups softened butter or margarine
2 cups APF
1 cup of granulated sugar
1 tsp of baking soda

Preheat oven to 350f
Combine and mix all ingredients in a large bowl
Pour batter into a well greased loaf pan, and bake for 1 hour.(or until a toothpick in the middle comes out clean)

For something different sometimes I’ll add a cup of crushed pineapple, or a cup of semi sweet chocolate chips to the batter.

Banana bread is one of our family's favorite desserts/treats.  One element I started incorporating years back was a cinnamon-sugar treatment pre-bake:

 

Once the pan is greased, but before the batter is dumped in, I dust the bottom and sides with cinnamon-sugar, and once the batter is dumped in, the top gets a similar dusting.

 

Never lasts long (took a loaf made this way into work one time, and my coworkers destroyed it in less than 15 minutes), and the cinnamon adds a nice aroma/flavor to the banana bread.

Making this now, looks a little done on top but still has 25 minutes to go. It's on the middle rack, should it be lower?

Making this now, looks a little done on top but still has 25 minutes to go. It's on the middle rack, should it be lower?


I have it on the lowest rack... how did it turn out?

I thought it was good but turned into the grand canyon after it cooled. Huge gash right down the middle. Probably try again tomorrow and not try to use the microwave to soften the butter this time. Not sure what else would have done that.

Made another double batch this morning and I’m trying the cinnamon sugar topping, and I added good vanilla extract too... just put in the oven I’m anticipating the aroma soon

Both loaves went “poof” they were inhaled by everyone.... that splash of vanilla, and cinnamon sugar will be added to the recipe

I crank out loaves of banana bread weekly for mom, she loves it and it makes a good bedtime snack.

 

My recipe is:

 

Melt 1/3 cup of butter in a pan

Add 2 extremely ripe bananas well mashed ( try not to have any solids, they don't cook well) and mix

Add 3/4-1 cup sugar ( I only use 3/4 cup personally) , 1 egg, and 1 teaspoon vanilla extract, mix well

Add a pinch of salt and a teaspoon of baking soda. Mix well

Add 1 1/2 ( one and one-half) cup all purpose flour. Mix well

Grease bread pan and toss into a 325* oven for 55 minutes.


Very similar to Moon's recipe

I’m getting great reviews of the addition of cinnamon sugar on the top... I haven’t sampled it so I’ll take their word on it ;)

Today's batch I took another one of Bklmt2000's tips and I lay down some cinnamon sugar 1/2 way through laying down the batter in the pan.

In all seriousness he may need to add a little more baking soda to the party. I like to put my ingredients in a certain order... Eggs, butter, vanilla, baking soda, bananas, sugar, then slowly add the flour till combined... I have noticed a collapsed look while they rise during the bake, but then they puff out. You really need that hour

Yes!

Turned out to be one of the first things suggested - different flour.

I was so sure I was using the same flour ( Martha White with Hot Rize!) that I always buy but had actually bought the regular. I always add some baking soda and the amount with the Hot Rize was perfect but with regular flour it just sat there, flat as your hat.

I had taken it out of the bag  as soon as I got it and put it in a plastic container so I wasn't aware it was different until I found the receipt.   :facepalm:

After I checked the receipt and saw I was an idiot, I moved on. And every loaf since has been as good as the ones before the mix up.
