Banana Bread

2 ripe bananas
2 large eggs
1/2 cups softened butter or margarine
2 cups APF
1 cup of granulated sugar
1 tsp of baking soda

Preheat oven to 350f
Combine and mix all ingredients in a large bowl
Pour batter into a well greased loaf pan, and bake for 1 hour.(or until a toothpick in the middle comes out clean)

For something different sometimes I’ll add a cup of crushed pineapple, or a cup of semi sweet chocolate chips to the batter.

Banana bread is one of our family's favorite desserts/treats.  One element I started incorporating years back was a cinnamon-sugar treatment pre-bake:

 

Once the pan is greased, but before the batter is dumped in, I dust the bottom and sides with cinnamon-sugar, and once the batter is dumped in, the top gets a similar dusting.

 

Never lasts long (took a loaf made this way into work one time, and my coworkers destroyed it in less than 15 minutes), and the cinnamon adds a nice aroma/flavor to the banana bread.

Making this now, looks a little done on top but still has 25 minutes to go. It's on the middle rack, should it be lower?

I have it on the lowest rack... how did it turn out?

I thought it was good but turned into the grand canyon after it cooled. Huge gash right down the middle. Probably try again tomorrow and not try to use the microwave to soften the butter this time. Not sure what else would have done that.
