Super easy almond flour pancakes

I took to making these when I was doing the keto diet.  I've continued to used this as my standard pancake recipe.  Very easy to make and you get a nice fluffy pancake out of it, which is an issue with many of the almond flour pancake recipes a tried

 

 

1 c. fine almond four

2 eggs

2 tsp. baking powder

1/4 milk (water or almond milk is fine here, too)

 

Blend thoroughly and scoop on to griddle/pan.  The key is to let them cook all the way through without disturbing them, use something to cover them to keep the heat in.  If you are cooking in a pan, use the cover.  Make sure to cook on low enough heat to prevent burning before they cook through.  Once the tops are no longer wet, flip and cook for 30-60 seconds, just enough to brown the other side.

I made something similar with cashews.  I don't cover them, just pour on a griddle and make like a normal pancake.  I never use a recipe, just dump, but it's cashews, eggs, milk, and baking powder in the vitamix.  I start with just grinding up the cashews, then adding the rest of the ingredients.  Everyone says they have the best flavor of any pancakes they've had.  Cashews make for a sweeter pancake.  I don't feel the need to put anything on them, just grab and go.

Interesting. I can only eat almonds and walnuts, so that's out for me. I thought about trying walnuts but I would think they'd be too oily. I haven't fooled around with ground walnuts at all.

It's a bit tricky to grind the really oily nuts.  I pulse them and don't put too many in the vitamix at a time.  They turn to butter really quickly.  

 

Right now I can only eat pecans.  The kids love the cashews.
