Scottish 60/- 2.0 by Matt P. 

 

 

Water Profile:  

 

Ca: 40

Mg: 11

Na: 16

Sulfate: 73

Cl: 73

Bicarb: 20

 

Mash pH: 5.32

 

Recipe formulated for 7 gallons Pre-boil/ 6 gallons post boil. 60 minute boil- 76% brewhouse efficiency

 

  • 5 # Marris Otter
  • 0.5 # Lt. Munich (German)
  • 0.75 # U.S. Caramel 40 
  • 3 oz Chocolate malt (English)
  • 0.33 # Flaked Oats

 

Single Infusion mash- 158*F- 1 hour, mash out 168*F -20 minutes. I use 1.5 qt/lb- I just 3 gallons of strike and sparge water,- top off with treated water directly to the boil kettle to make up for pre-boil volume. 

 

Hops

  • 60 minutes- 4.3 AAU East Kent Goldings (.70 oz @ 6.1% AA) 

Yeast

  • WLP 028 

 

Truth be told, I made this beer just as 5 gallon starter for a Wee Heavy back in January. The beer benefits with some time on it- i made this in late January, and gets better as the keg gets lower. Just a easy drinking beer that no one seems to make anymore.

Thanks Lefty, pretty straight forward :) Your last sentence: "Just and easy drinking beer..." Will be the majority of what I make this summer.

hmmmm. I might be trying one like this. I've  for sure got something hoppy in the hopper next, but an easy drinking, malty beer might be after. You have any thoughts (experience) on how this compares to something like Odell's Shilling?

For comparison, I had put a Scottish recipe together a couple years ago based on an extract version I used to make. This is probably more of a 70+/- but you get the idea:

7 lbs pale ale malt or MO/GP
8 ounces Dark British Crystal
4 ounces Brown Sugar (added to boil)
1 oz Pale Chocolate
2 ounces Maltodextrin (optional, added with 5 minutes left in boil)
24 IBUs of Willamette added at beginning of the boil
Wyeast 1728 Scottish ale yeast

OG: 1.045, FG: 1.011, IBU: 24, SRM: 10, ABV: 4.3%


Smooth, easy-drinking, goes well with a lot of different foods, etc. A nice spring or fall beer. Cheers to Lefty for reminding us of how good a beer like this can be.
