making my scottish 80/- v2 on sunday hopefully.Last time around I used GP, C90, and RB. This time I'm using GP, C65, C120, and RB b/c I don't have any C90 and I have some C120 that's already milled that I want to get rid of. I'm using about the same amounts of everything (total crystal is still about the same, equal parts C65 and C120). Any predictions for how this will compare to last time around?

My guess is that it will turn out slightly sweeter. Maybe more 65 than 120?

Not a bad idea - the one I have on tap now is excellent but I wouldn't mind it being a little more caramel flavored.

Perhaps collect some of the first runnings and boil that down a bit before adding it back to the boil kettle? Just a thought.

yeah - I was thinking about trying this out. I'm a little bit worried about using a small pot I use for cooking regular food though in case there are remnants that could mess up the flavor of my beer. I have a steamer that's pretty much only had brocolli in it so that seems safe. How much volume do I need to start with for the boil down?

Made 10 gallons of beer this week... a Christmas beer with cinnamon & vanilla on Tuesday and an English Bitter yesterday. More brewing coming up next week... a Prague Pilsner and a Vienna with Staro-Prague lager yeast. Cheers!

Not me! I have a rare 3-day weekend -- a buddy is in town from the States and there's no yeast ready right now in the brewery. But, even if I did a double batch this weekend, it wouldn't come close to what you're doing! Our small system is about 2 barrels and our big system is about 8 -- 50 is just a dream!

I'm not sure either. I was not satisfied with my last Scottish, and thought about doing this as well. Might want to start a new thread on the BB on this topic so we don't hijack the current one.

Haha...The system at the Schlafly Bottleworks can handle about 33bbls, but how much we make depends on the gravity of the beer, our lauter tun and grist case aren't big enough to accomodate a full batch of a higher gravity beer. But my system at Mattingly is 1.5bbls, so I'll be brewing 6 times this weekend...I wish it could be done in 2...

Racking my bitter and brewing an American IPA on Sunday, I know a little boring, but I miss having something hoppy on tap. Next weekend is another Alt because the first one turned out quite nice and is almost gone already :smilielol:

Did a batch of cream ale today.Dont know if I mentioned this before but my neighbor and I did an experiment last weekend. We both brewed Jamil's 80/- recipe (as close to the same as we could get. He brewed extract, and I brewed all-grain. Both boiled right to the same gravity, used the same yeast, and they are right next to each other in my fermentation chamber. Should be an interesting test. Science is fun....and delicious.
