So about 3 weeks and this looks like it has fermented out.  Used 1/3 of a pack of Cotes des Blancs  in one gallon minus a little or a gravity and taste to compare to the old stuff I had.  Bottle or what?

 

I'm guessing, since I'm a newb, that this should ferment out to around 1.00

You can bottle or keg, similar to beer.  And yes, cider should ferment out to 1.000 or lower, since all fermentables are easily-fermentable simple sugars.

 

If you bottle and want fizzy cider, prime as your would for beer, and if you want still cider, leave out said priming.
