Hey Fellas, thoughts on using a WY3711 smack pack from May. I'd likely make a 1 to 2L starter if there's a chance for lift off but I don't want to waste my time or DME :) Also, I won't actually get to it until end of December, early January. What do you think?

It'll be fine.  Start with a 1-L starter, so in case the yeast doesn't wake up, you're not out the DME for a 2-L starter.

3711 from May? Absolutely no problem. If it has been refrigerated it wont take long to wake up IME.
