how many IBUs would you guys shoot for on this? and am I going to make a muddled mess with the hops I throwing in at the end of the boil?

40ish I would say for me.
I think I would target 30 IBUs at 30 and then figure I would get the rest from the late hops.

I measured the grains and water last night. tonight I'll make a SNS starter and do some more prep and Friday....

I thought so. I just added the 2L to my total water I measured for the batch so I could treat it all with a campden tablet. when I was looking at the single pitcher of water I was thinking to myself that it looked like way too small but it's a 2000mL pitcher so I guess it was right

beer was chugging away this morning. starting at 62F and going to start ramping it sometime today to ultimately hit 69-70F within a few days. b/c that D tho.

looks like it's probably done but I'll wait another day or so before crashing it just to be safe. gravity is 1.012 right now which is what I was hoping for. please ignore the "not beer clean" tasting glass here - I just grabbed it and dumped the hydro sample in there to see how it tastes. very smooth right now with a nice pop of hops in there. I think it's likely to be a winner but we'll know for sure once it's kegged and carbed.

just kegged. uncarbed but cold and the beer is insanely smooth tasting right now. almost too smooth but I think with some carbonation it will be just right. this has the potential to be the best porter/stout I've ever made.
