I pressed 150 gallons of cider at a club member's house yesterday and took home 15 gallons. I added 12# of honey to 5 gal, some jaggery and brown sugar to another 5, and some dark candi syrup to the other 5. This cider is all raw and unpasturized and I plan on using the wild yeast for as much of the fermentation as possible. I added some Fermax and am hoping for the best from the critters, but I will add some other yeasts as needed. Anyway, as I was mixing up my cyser, I saw a yellow jacket floating in my carboy... My basic instincts made me scared right away, but while pressing the apples, I pulled out dozens of these guys from the juice, so that calmed my nerves a bit. Will this guy do any harm? Should I strain him out or let him float?
