5 gallon batch (accidentally ended up with 6 gallons)3.5 lb White Wheat2.0 lb German Pilsen3.0 lb Munich Malt0.5 lb Caramunich1.5 lb Carawheat0.125 lb Carafa III(rice hulls if you are so inclined, I didn't use much)Mash at 152F for 60 min0.4oz of 12.1% AA Magnum for 60 min (like a 44 Magnum - get it?!)Ferment with Wyeast 3068 or equivalent. I kept it in the low to mid 60s so the banana is kept to a minimum with mostly spice/clove predominating.I fermented this for a week and it had hit FG. I then bottled with a lot of corn sugar (I accidentally ended up with 6 gallons so I used 8oz of corn sugar in my primer).Estimated SRM: 16-17OG: 1.056 (my OG was actually 1.046 b/c of the extra gallon of liquid)FG: 1.012I assumed 70% efficiency for my calculations.Results - motherloving delicious![mod edit - image removed]

I'll bite. I don't currently have a recipe for this style so I'll drop it into BeerSmith and put it in the rotation. I'll let you know when it comes up... if I remember.I'm doing a 10 gallon batch though :)

Does anyone have SRM, yield potential, etc. on the carawheat? I don't have it in my BeerSmith grain list.Edit: So far I'm subbing in crystal60.

doesn't german beer law state that a dunkeleizen has to be at least 50% wheat in the grist :) :devil: Looks verrry tasty! Might have to make, but I want to get some temp control first otherwise the clove might get ouda control on me again....

You got me :devil:I actually didn't notice this until after I ordered my ingredients. Originally the wheat percentage was higher but in the process of messing around with amounts I forgot to check again. I don't think adding a little more wheat would really hurt this. Have a blast!

Just made this again about a month ago but with some very slight alterations. I used debittered black instead of carafa III b/c that's what I had. I also upped the white wheat to 4.25lbs to get total wheat content at 50% :smilielol: I ended up with about 5.5 gallons and primed with 7oz of corn sugar. I just had the first bottle that was fully carbed last night and damn do I love this beer!
