Yeah 4 it is. Exactly the reason I'm not going to try and push getting a starter ready is I don't want it to be half ass.Three packets of US-05 should be enough, but 4 is good insurance.
Eleven gallons of wort @ 1.094 OG is no time to scrimp on an extra packet of yeast.

Wort is in the fermenter. I guess I shouldn't have planned for much of a efficiency hit because I got 11.25gal@1.099 OG. This is the biggest beer I have made with this system and this beer was kinda a test to see what it could do. I think it did fairly well.

I'm not sure if I could pick out exactly what it added but I'm sure it played part in the heavy resin flavor. I have so many other hops and everything blends together very well. I know one thing late Apollo is not a bad thing.That's really cool. Damn good looking beer too. Are you able to discern the flavor from the late and dry apollo you used?

Yeah I was surprised on the color, thought it would be lighter. But I like it.Late Apollo has been on my list of things to try for a quite a while. Problem is that list of new things to try is extremely long!

I have been thinking about doing a IIPA for a while and wanted to get away form teh typical fruity ones. I think i am going to steel your hop schedule, add in some comet late and see what comes of it. I plan to go with a lighter grain bill seeing I like my IIPAs light in color..

So FG was 1.025, just under 10% abv. I have this kegged and am drinking it now. This is delicious. Really, really dank and resiny. The malt is perfect and provides just a hint of sweetness. Wouldn't change a thing. Drinks very easy and could get in some trouble with this. I brought a growler to a party last night and was a huge hit. It was a group of homebrewers and everyone was impressed. One guy there is working on opening a brewery and he liked it so much he wanted to know if I would come in and brew it on the pilot system sometime. I like the color too.
great color. I can almost taste it from here!
