Did you ever use this yeastTake a look at Wallonian farmhouse at the yeast Bay.

Well, I made a nice big starter and then brewday got delayed and delayed and delayed and the yeast eventually got poured out . It is on my list especially after reading about it here. I posted it here because there has been speculation on some threads that this is the Fantome strain, or one of them.

Yeast Bay's description doesn't remind me of it. WY3725 wasn't particularly funky IME. Though that Wallonian does sound very interesting from the link you provided.
One other thing for Poptop about this yeast... It is powdery as hell and will take half your life to clear if that's a priority for you. I have a packet of this in my fridge and have been thinking of doing several beers with it including an IPA/DIPA. There are several things about it that I think give it some potential to make a very interesting IPA/DIPA.

Thanks Fellas, I will look into 3725. What sparked my interest is getting a hold of some Fantome to drink. How their Saison is described makes me want some!! I have not tried the Wallonian farmhouse but I have tried Yeast Bay's Saison blend and it is fantastic. The flavor contains a good amount but not over the top fruit and spice. I am using the slurry this Saturday for a 10 gallon batch of Saison 80/20 Pils/Vienna with magnum on the front end and Strisselspalt to finish. Same recipe I made my Motueka Saison from. Don't tell DuPont but YB's blend gives them a run for their money
Talk about powdery? YB's blend won't drop out either. This is no worry to me with a Saison.

Great minds I just carbed up a batch of BIPA with YB's blend and used huge amounts of Citra and Simcoe on the finish and DH. It's like a grapefruit punch to the face and cloudy as hell. Not for the uninitiated but pretty good overall.
