Mexican Pizza sort of thing...

I know a lot of you guys make your own pizzas. I wanted to make a pizza that my wife and I had at American Flatbread in Burlington, VT. It was a type of Mexican pizza with salsa as the sauce, onion, black beans, corn and a sausage (although I don't think it was chorizo). So unbelievably good. Anyway, here's what I did...Posted ImagePosted ImageThere were three of these thin crusts so my son made a "western" (bacon, onion, crumbled Italian sausage, KC Masterpiece as the sauce), I made the Mexican (also used the crumbled Italian sausage) with Monterrey Jack cheese and there is one crust left and I think my daughter is going to use traditional pizza sauce, mozzarella cheese and fresh oregano from our graden). looks tasty!  I used to really like Mexican pizza day when I was in middle school.

Try it with a 3 parts flour to 1 part cornmeal mix for the crust.

Would be good, I'm sure but I admit that these were store-bought, uber-thin, pre-made crusts.  :blush:

I don't blame you.  sometimes you want pizza and you don't have time to make the dough.

The salsa had jollies in it. Look around 8 o'clock on the second pic. :)

and 9 o'clock.  my middle school mexican pizza never had jollies on it.  it was basically regular pizza but with "taco meat" and "mexican cheese" on it.

I could have used ground beef with taco seasoning or even the crumbled Italian sausage I used with some taco seasoning.  :scratch:  Next time.

the beef with taco seasoning is great on mexican pizza.  do eeeet!

I have those same pizza pans....

I have used and abused those pans many times. They are great for pizzas.
