Next weekend is War of the Worts. My club is going to Coppertail and we're each getting up to 20 gallons of wort from their mash tun to turn into whatever beer we want. The wort is basically just a 2-row grist that they make into Free Dive IPA. It will be a 1.059 wort.
I want to do something different with it. I'm thinking maybe make a hoppy belgian blonde kind of beer that could be a bit like their Unholy tripel scaled down. I'm thinking about using the trappist yeast and some german Opal hops that I have for flavor/aroma/dry hopping. Use nugget for bittering and have a pale ale kind of hop schedule. Use 1388 to ferment.
I only have one carboy anymore so I think I'm going to do just this one beer. Going to have to go old school with this one too and borrow an IC and then chill the pot in a cooler with ice, then dump it in the big mouth bubbler.
Anyone else have some ideas?
