Red X Doppelbock

So I'm brewing today and the next experiment with Red X is a Doppelbock. I'm kinda hung up on it a little. I'm thinking about doing a 50/50 Red X:Munich. Then again Id like to add some Pils. I know typically some darker versions call for Vienna but I don't have any on hand. So here is what Im planning. Im a little worried about the color from the Red X because the LB doesnt really correlate to the actual color you will get from the grain. So for insurance Im going to add some CM60. I will stay at the bottom end for ABV for the style.  Thoughts..........

 

36%-Red X

36%-Munich

16%-Pilsner

10.5%-CM60

 

 

OG-1.075

SRM-19.5

That looks very nice.  What do you want the Pils for?

 

I did something similar in the lines of a Red-X Alt and it came out fantastic.  Based on what I had on hand I added some CaraAroma 130 and some 120 to help color and the batch came out very dark red. The base of the bill was RedX and Munich.  Hit it with Moteuka.  It's all gone and that is sad...

There is really no reason for it since this is on the darker side of the style. I was just adding it in there because my last version used it and it came out excellent. It can easily be omitted and doing so would actually fit better I'm sure.

Just wondering.  If I recall you posted a RedX Saison that looked extremely sexy.  No doubt your grand scheme will bode well on the palate.

The Red X Saison Motueka was extremely sexy. Tasted wonderful too.

I don't really know the style well at all. I am reaching the end of a keg of a 98% Red-X ale and now have used it at 13% in a AAA. To, me it definitely has it's own character when compared to Munich. Both are very malt intense but different in a way I can't really describe. Anyways, i like your idea of combining the two here. Did you do that for complexity or necessity?

 

WRT the L-color of Red-X … It is listed as 11-13L but Beersmith (for whatever reason) has it rated at 15.2L. My experience with it tells me Beersmith's estimate is closer to the real color. It may even be darker than that. IOW I get more color from it than expected at 11-13L was that your experience with it as well?

The combo of the two offers quite the malt backbone.  When I spoke to a nice dude at Farmhouse Supply he said he made an almost total RedX beer that lacked body and that incorporating Munich would be a good idea.  I took his advice for my RedX Alt and it turned out to be one of my best batches.

Yea, I am looking for some depth with the malt profile so combing the two grains together seemed like a good idea. I already know what 100% Red X has to offer but I have yet to combine it with Munich. 

 

I use PM and have the LB set to 12 on the Red X. I still think the color is closer to 60L depending on the % used.

Ended up omitting the Pilsner. Upped the % of RedX and Munich to make up for it.
