Trying to work this one out. I know a lot of you fellas like the Simcoe's and Amarillo's mix. I'm thinking of a little Simcoe for the bitter and a healthy dose of Amarillo and Mosaic in the finish along with a conservative dose of Simcoe with it. How do you's guys like to incorporate these varieties?
