Seeking info on DFH Palo Santo Marron

Hi Fellas, Anyone out there enjoy this beer? I like to sip on one in the evenings once or twice a week and would like to develop my own version. Hoping to start a discussion and potential recipe formulation. https://www.dogfish....anto-marron.htm I like the dank aroma and the resiny flavor of the Palo Santo wood. It is not overly bitter or roasty (at least to me) which is a plus (to me). A real snifter delight. Cheers, Mike

Not too much info on their website. 12% abv 50 ibus and lots of wood character. So you're looking at about a 1.110 beer. Pale, crystal and chocolate malt. Maybe some Northern Brewer hops up to 40ish ibus and a little late hopping for the last 10 ibus. Then sourcing the wood for some aging.

I could go down a bit with the abv to around 10 I think. The wood is obtainable online and I don't think the sugar is any big to do but I'd use Piloncilo. I'm thinking out loud here 60% 2 Row 17% Munich 12% Piloncilo sugar 6% C120 2% Chocolate 2% Midnight wheat (unroasted color) that gets me to approx. 1.090 Very busy idea for my typical brewing.....

Perhaps a half ounce of the Palo Alto wood. From what I've read on another forum, it packs a big punch. CWG, have you tasted it?

I liked the DFH beer a lot. It's been a while though. I may have one in the cellar. I'll have to try it again.
