Another info link. Personally, I can't get enough of the Carafa special I. currently my favorite speciality malt.

Some folks say that Carafa I compares to Chocolate Malt, II compares to Roast Barley, and III compares to Debittered Black Malt.Make sure you are getting the Carafa Special Dehusked version of Carafa.- Jim

If you're using carafa (or any dark/black malt for that matter) strictly for color, you might also consider using Sinamar instead.

I can't express in words how much better my dark beers have gotten since I started using Carafa products as opposed to Black Patent. Sinimar is great too though. I like the idea of turning anything black, but if you want a bit of roast along with the color, use Carafa.

I had been told that Carafa II is comparable to roasted barley, but to me it tastes quite different. Much smoother roastiness, less grainy, and less bitter. And it wasn't the dehusked version I used.

I have used Carafa several time mostly II and have been really pleased. I like Black Patent in a stout but I darken my other beers with this malt where applicable. Definitely recomended and dehusked too.
