So I'm collecting wort for a sweet chocolate stout. I was only going to make a 3 gallon batch but so far I've collected 4 gallons of wort and it a much higher OG than what was projected. How did I manage this?I'm going to batch sparge for a second time to see where that falls, I might just go ahead and make a 5 gallon batch out of this.

I'm watching the SG but to be honest with you I've never checked PH in 3 years of brewing. Is this a big concerne?

Certainly can be, especially with dark grains. If you fly sparge, that can compound the problem. OTOH, if the beer tastes good, you don't have a problem.

I've noticed that my efficiency is wildly better 7%+ when using less grain. For example, when I make my 70-/ at 1.035 I notice about 79% compared to ~70% for a 1.060 batch.

I've heard of that I never get any credit here...... . I can not remember if it was here or the GB. Someone had tracked efficiency versus OG and suprisingly (at least to me) it was a linear relationship. Wish I could track that down again because I just ballpark it when I go out of my usual gravity range.

Not here. I don't consume until the boil starts.
