I've made homemade ginger beer but nothing that was really targeted for a dark n stormy. Any recipes you guys really like for this purpose? I generally just use goslings ginger beer and it makes a mean dark n stormy.

Good timing for this thread. I planned on making Guest's recipe this weekend. I may just be tempted to top off the keg with rum after I finish a few pints.

while reeds is good I'm not sure it's the best for dark n stormy. it's a little too tropical fruity I think.

just out of curiosity - how do you guys handle the ginger? do you grate it? put it in the food processor? juicer? straining the ginger out at the end has always been kind of a pain to me.

I grate it. Then I use a fine mesh strainer. I let it cold crash in the fridge afterwards.
peeled or just scrubbed?

the idea of grating enough ginger for say, 5 gallons scares me. then straining it as well - yikes!

Food processor helps, with the grating plate.Blanching the roots helps the skin rub off.
I don't find the peeling is so bad. i agree i wouldn't want the skin in there.

i don't think i have a grinding plate like you are talking about for my food processor. I just have the blades and a plate for making little carrot strip type things. i'm guessing the blade would make pretty quick work of the ginger though. i just need to make sure i really clean the food processor bowl out first. a lot of pesto has gone through there so it smells pretty garlicy.

Interested. Couple of questions.

2. Will this require changing all the seals on your keg if you want to go back to putting beer in it?
