I rack into kegs after secondary for extended aging and it just so happens its easy to draw a sample off too!  I'll usually bottle up some when a gal or two is left (which is usually 6-12mo later) if its one I want to have some around for a long time.  I like it in the kegs because sure I could pull a full pint as some have concern over but I can also just pull a few ounces to enjoy as well.

 

The keg of tripel on tap is the sneaky one... :P
