I tried to get as many marketing buzzwords into the title but couldn't fit "Farmhouse". Anyway, we have made this dish a few times and it's very nice for cold winter dinners but works anytime.1-2 pounds of chicken breast, diced.1 fifteen-oz can of fire roasted tomatoes1 fifteen-oz can of black beans2 ounces browned chorizo1 package yellow rice (Vigo is good)½ tsp of kosher salt½ tsp black pepper1/3 cup of waterCook the rice according to the package directions. Brown the diced chicken in a cast-iron pan or any suitable method you have. Add the tomatoes, chorizo, salt, pepper and water to the chicken, bring to a boil and then reduce heat and simmer for about 6 minutes. Add drained and rinsed black beans and go for another 2 minutes. Spoon the rice onto your plate and then spoon the mixture over the rice. Add what you like on top... sour cream, cheese, etc. Use some peppers in the mixture if you want but it's not necessary. I just made this last night and everyone wolfed it. Cheers Brothers.
