I am brewing on Tuesday.11 pounds Belgium Pale.5oz Simcoe FWH.5 oz Simcoe 45 min.5 oz Simcoe Dry hopNow, I was going to use Notty, but Notty has been naughty, and working like I want(long lag time)So, the LHBS only carries Wyeast Smack packs.....which should I use, or more to the point what would you use and why....Think I might want a more fruity profile from the yeast...but not sure.Tim

Then probably one of the British strains. I personally like 1028. If you could tell me more about what profile you're looking for, I can probably suggest a couple for consideration. Another option might be 1272, which is an American strain (Bridgeport?) but is a little more fruity than 1056.Think I might want a more fruity profile from the yeast...but not sure.

Looking at about 35 IBU with the pale ale grain.Simcoe has a pine/citrus profile.I am not real knowledgeable about yeast, so I am looking for something to compliment.I have Notty, US-05, S-33, and K-97 on hand as far as dry yeast go.....Tim

Then you want 1056 or 1272. I've been using 1272 a lot lately, I like it a lot. Slightly fruitier than 1056, but still clean enough for American ales. Floccs better as well.I am not real knowledgeable about yeast, so I am looking for something to compliment.
