So the Kitchen is finally done... Cooking in the pseudo kitchen for soo long has really made me want to really make a nice meal. I've grown tired of grilling, bbqing, etc. I really wanted to go all out on something different... I tapped some family background, and with a lil help from MainleyBrewers pirogi thread... I went wild......  Wanted to make Czezy, Pirogi, and Red Cabbage....

 

 Czezy is the Polish rendition of Rouladen, the big difference is they use Dill pickle instead of Gherkin(which is favored in the German version)We start with thin sliced pieces of Top Round

I then used a rubber mallet, and a gallon zip lock to "meat my meat"

Then spread real good stone ground mustard all over one side...

Next  I coat a relish of chopped dill, onion, and bacon on the mustard side...

then roll with butchers twine...

After the rolls are browned I then sauteed the trinity in the drippings....

While the Rolls are resting ... Pirogi.......   I used a variation of my Grandma's recipe.... I basically took a  tip from Mainly's dough recipe, and added sour cream to the dough. It gives it an elasticity that makes it easy to work with.... The filling is 3lbs Yukon Gold, 1 1/2lbs of cottage cheese, 2 onions, and 1 1/4 White Pepper I also cheated, and used my brand new commercial Kitchen-Aid mixer, and pasta roller..... It made it really easy...  :goodidea:

 

I made the dough and filling the day before...

I rolled the dough into a 1" snake, and wrapped it in plastic. I would cut off 1" segments, and then roll with a pin just to flatten it out. From ther, I give it to the minion...

But that's a mirepoix... a "trinity" has bell peppers instead of the carrots.

So dough is cut, next we add the filling. A little over 1 TSP in the middle of each shell

We then fold the shell over leaving an "under-bite" with the bottom part of the shell peaking out under the top part. You then fold the under bite over, and seal the crease with a cold, wet fork.

I bet it smells great in there! Looks great. FTR..My dad taught me trinity was carrots, onion, celery, too.
