apple-maple breakfast sausage

A recipe of my own design.

 

1 small shallot, finely chopped

1 medium granny smith apple, peeled, cored, and finely chopped

1 pound ground pork

1.5 to 2 tbsp maple syrup

1 tbsp fresh sage, finely chopped

1 tsp chopped (you guessed it, finely) parsley

3/4 tsp salt

1/2 tsp white pepper

 

mix all ingredients well, use a food processor if you want.

 

put in a bowl in the fridge overnight to marry the flavors.

 

form into patties or stuff into skins the following morning and cook 'em in a cast iron skillet until they're done.

 

My wife pronounced this "the best breakfast sausage ever."
