US56 for a wheat?

Anyone used Fermentis 56 in a wheat beer? I want to brew a quick wheat and don't have the Wyeast 1010 that the recipe calls for.Will 56 work and give me about the same taste?

It'll work but it won't be the same. I've done it in a pinch and wished I had gotten the 1010. still a very drinkable beer though.Maybe you can talk Al out of some at BT

I've wondered about using this yeast in wheats as well. Using 1056 or 001 in a 50/50 2-Row/Wheat beer...

Nottingham is a little better if you can get it; it has some of the twang you get from 1010. If not, S-05 (56) is fine in an American Wheat. I've used it for that a dozen times or more.

I'll shoot Al an e-mail. At the last executive meeting of the Hall of Foamers John indicated that they were getting too busy to give brewers yeast.

If you want the wheat to dominate the beer, it's a fine choice. Seems like a good reason to brew a wheat beer to me. <_<
