so, i tried making a melomel for the first time this last saturday. stole a recipe from the green board, modified it slightly.3 gallons of apple juice10 # of sonoran desert honey2 packettes of lalvin 71b3# of blackberry pureei made a starter, included a couple tablespoons of yeast nutrient. i also held back half of the starter, in case i needed to kick it again. getting the honey and apple juice combined was a trick. i ended up using my aerator in the fermentor to get them mixed sufficiently. i was surprised how high the specific gravity is of apple juice, like 1.058, iirc. the combined og for the apple juice and honey is 1.114 i seem to recall.i haven't put in the blackberry puree yet, i was going to wait until i go to the secondary. i'm wondering how many sg point a 3 pound can of blackberries will add. anyone know?so how long will primary take, about?
