Actually I tossed them in a basket on the gasser while smoking a pork tenderloin. But the same principle. The wife had seen this on America's Test Kitchen for country fries. Cut the potatoes to whatever shape you want. Bring 5 cups of water to a boil with 1/2 tsp of baking soda. Dump in the taters and bring back to a boil for 1 minute. Drain dry. Toss in oil and season as you wish. The short boil and pH from the baking soda make a pasty, starchy layer on the outside that will brown up differently from just putting potatoes on a cookie sheet. Cook at 500df for 15 min, flip and another 15.
I'll never do oven fries the old way again.
