When using instant oats from the grocery story in the mash, can you just chuck them into the mash or do you have to cook them before?

Toss them is. They are gelatanized already.

any recipe that calls for Flaked Oats, like Oatmeal stout, just substitute QuickOats, from the bulk food section or from the cereal aisle, that's what's in the "flaked oats" from the home brew shops

The flaked oats I received from NB look just like my regular rolled oats. The quick oats we have are smaller and seem more broken down/processed. Are they not both pre-gelatinized. Could you use either one to the same effect?

actually, I was in the LHBS and he was filling up the flaked oat bags from the exact same American Grain Millers bag (at 4x the cost) that I saw the grocery filling up the Rolled Oats bin with, so yes, Rolled should be the same
Quick Oats are Rolled oats that have been broken into smaller pieces, instant have been processed even further, I have only used Quick, and Rolled in my beers, and have never noticed either to produce a different affect.
