Slow cooker chicken quesadillas

Ingredients:1 pack of chicken thighs1 medium jar of salsa chunky is better1 can of black beansShredded cheeseFlour tortillasIn your slow cooker combine the thighs, salsa and beans. Cook on low for 5hrs+. Add the beans 30 minutes before assembly to warm through. Preheat 1 pan large enough for the folded tortilla with filling I use one of those flat pans. At the same time heat up a cast iron pan. Make sure the cast iron pan fits inside the other pan. With a slotted spoon scoop the chicken mixture onto one half of the tortilla and add as much cheese as your colon can cope with. Fold and transfer to the pan. Place the cast iron on top of the quesadilla to act as a press and to cook the top. Leave it alone until browned to satisfaction. Using this method I can make two fairly large quesadillas at once. I get a really nice restaurant style result, with a good crunch to the tortilla. I like to serve it with guacamole and sour cream on the side.
