I just made this up just now -- Mainely's post inspired me to post about it, as it got rave reviews from the family and even the picky kid.
1 large cucumber
1 large handful of grape/cherry tomatoes
1 handful of shredded carrots
1 bunch of fresh dill or 1tbsp of dried dill
6 tbsp rice vinegar
6 tbsp white sugar
1/4 tsp salt
another 1/4 tsp salt
in a small bowl, mix vinegar, sugar, dill, and 1/4tsp salt.
toss in the shredded carrots and set aside while you make the rest.
slice cucumbers very thin.
put in a bowl with the tomatoes.
toss them with the other 1/4tsp salt.
let 'em sit for about 5 minutes.
toss the vinegar/sugar/carrots/salt/dill mix into the bowl and stir it with the cucumbers.
refrigerate for 15 minutes to marry flavors.
eat with fork.
