We have one flush mounted in our 10 tap rig. Ours has a drain hole/connection. I didnt read where this one has a drain. I couldnt imagine a drip tray like this one without a drain.

Yeah, no big deal.
Have a few bits around. Ive drilled these trays before and went through a few bits.

how would you guys add a drip tray hole that wouldn't have a raised edge? I'm imagining a scenario where the tray always has a 1/4" of crud in it b/c of the raised edge around the hole.

Gotta cut a hole where it sits and run a line somewhere. Some applications this wont work.

so you cut the hole, what do you put in it for the hose barb? how does it seal up around the hole?

You could file the hole and remove all the burs, make the raised edge face down. You could use an aquarium bulkhead to connect a drain. Or you weld on a fitting.

You can solder SS. So if you get a copper nipple or barb you can just solder that to the tray. Or if you are fancy you can tig it

or that.
Also could just use some JB weld to hold whatever there. It will be under little stress.

How deep is the tray? I don't have a drain to run to in my setup so not a problem just taking it off the wall an dumping as needed.

There is a very long thread on HBT about soldering stainless and using a tool to make a flair for a coupling to fit into without a raised edge inside, this link starts on page 18 and farther in are better examples of kegs with couplings that are soldered in, which are fairly smooth on the inside wall.
