This is a quick weeknight meal I often make when SWMBO's away.  It's easy, not that unhealthy, and made from stuff that keeps in the pantry for a long time.

 

Frozen fish filets.  I used mahi-mahi from CostCo last night, but I've also used tilapia and other mild fish

Penzey's spice mix.  I used the Sate mix last night, but some of their curry mixes also work well

Tasty Bite Madras Lentil mix

Soft taco shells

 

1. defrost fish filets.  15 minutes in a bowl of water is usually good.

2. coat fish filets with spice mix

3. broil fish filets on a wire rack, I find 4 minutes a side works well

4. Warm up the lentil mix

5. Put fish filet and a couple spoonfuls of lentils on a wrap

6. Devour forthwith
