Cilantro Chimichurri

Grilled some steaks last night, just grocery store NY strips, nothing fancy. I have parsley, cilantro and oregano in the herb garden  so I made a half batch of this recipe.  I  used all the optional ingredients, minced everything by hand, added a jalapeno and left out the onion (didn't want to sacrifice a whole onion for such a small amount) Let it sit for an hour while the steaks came up to room temp from the fridge. We spooned it over the rested steaks. WOW! Really elevated the meal to spectacular. Highly recommended!

 

Here's how I made it:

 

    [*]1 cups each fresh parsley and cilantro, firmly packed[*]1/4 cup fresh oregano leaves [*]6 cloves of garlic[*]1 jalapeno, seeded and finely chopped [*]1/2 cup olive oil[*]2 tablespoons red wine vinegar [*]1 tablespoon fresh lime juice [*]Kosher salt to taste[/list] Preparation:
    • Chop the herbs, garlic and jalapeno very fine.
    • Transfer the herbs to a  bowl. Add the olive oil, lime juice, and vinegar, and stir. 
    • Season with salt and red pepper flakes to taste. 
    • Prepare an hour or so ahead of time so the flavors can marry.
