I'm currently reading Ken Schramm's book and was thinking of making some mead. He recommends making the first batch still instead of carbonated. Poll, do you guys mainly carbonate or no?

Usually not, but a light sprakling cyser or lemongrass/ginger mead (not Papazian's abomination) is a beautiful thing on a summer day.For a first effort or two, I'd go still, with a good varietal honey.

I would start simple. I do some carbonated meads, and they are nice. Get a feel for their profile still though first.
