Gluten Free Beer

Ok now I am losing my home support since the wife is trying this gluten free crap for a month. Anyone have a recipe for a gluten free beer?I'd like to make her happy, especially since I just order 55 lbs of Pilsner Malt.

Great Idea, but it took me almost a year to learn how to make beer...ugh! Hope Mead doesn't take that long.

Great Idea, but it took me almost a year to learn how to make beer...ugh! Hope Mead doesn't take that long.

No it just takes that long to mature (sometimes).

Making Mead is quite easy, it's the aging that takes a long time.AG GF beers are a real dificult thing as a homebrewer, you may be best off using the GF syrups sold by Briess

This. Except that Guest's buddy in Denver that is starting up his own meadery somehow produces killer meads in just a few months. I'll also say that the sweeter a mead is the less time they need to age (but the more time they will age without going bad).

FWIW, some of the best meads I've ever tasted were only a couple months old. Using staggered nutrient additions, you can make incredible mead relatively quickly.

Not according to the people who made them, who are some of the award winningest mead makers around.

A quick (relatively), drinkable mead: 14 lbs honey for a 5 gal. batch. 3711 yeast. Lalvin's SNA protocol (see WMC FAQs) Add cracked coriander, bitter orange peel to secondary. Package as sparkling. Can't miss.

4 lbs sorghum extract2 cups honey or agave1 cup molasses2 cups rice syrup1 cup corn sugar1.5 oz Northern Brewer bittering2 oz EKG finishingUS-05I have made this once before, my lady loves it and she's all GF all the time. Smells like an AG batch when brewing/boiling and the rice gives it a caramel note and soft mouthfeel.My alternative is:20 Litres of ANY (yes ANY) pasteurized apple juice from concentrate or not1 lb brown sugar1 package lavlin 1118 Champagne yeastKeg it and walk away. I do a 3-4 week primary then straight into keg.The reality is there is a LOT you can make that is GF and it's all tasty - mead and cidre are just scratching the surface.

JD: By the time your wife is done with the month long gluten-free diet, you still may not have a GF beer ready for her. There is a gluten-free commercial beer called RedBridge (or something like that) which is made from sorghum and rice. Not sure if it's available in your area (I think it's made in Milwaukee) but you could check it out. I do see threads like this on the boards from time to time but I rarely stick my head in because I don't really know much about it. Someone, somewhere has a decent GF homebrew recipe if you're thinking of trying it.

PLease, do not attempt to drink the RedBridge.   One of the big 3 brewing companies own it, and it tastes like crap.

If you can find Estralla (sp?), give it a go.   Or maybe you can convince her to drink cider.  :-)

I finally had a chance to try the St. Denny last week and I'm happy to say it's excellent. You'd never guess it was gluten free. Just tastes like a tremendous dubbel. Limited distribution, but try it if you see it.
