2 cups raw pecans1 tbsp maple syrup2 tsp water1/2 tsp kosher salt1 1/2 tsp chili powder1 tsp. cayenne pepper (or more/less to taste - this will be medium spicy)1/2 tsp Hungarian PaprikaPreheat oven to 325.Mix all ingredients but the pecans in a small bowl. Pour over the pecans in a larger bowl, and stir until well coated.Cover a baking sheet with parchment and spray with cooking spray. Spread the pecans on the baking sheet and separate them with a fork.Bake for 15 to 20 minutes, stirring every 5 minutes, until nuts are fragrant and crispy.Allow nuts to cool and store them in an airtight container for up to 2 weeks (although you will eat all of them in 10 minutes).

yeah - that would work. think I could use almonds or walnuts for this?

making another batch right now but this time a 1.5x batch since that's all of the almonds I had. I'm using amber maple syrup and dark chili powder so they are nice and dark red colored. really delicious.

i still haven't made this with pecans but everyone loves them with almonds.  i now make 6 cups at a time and they still don't last.  i need to find a bulk source of nuts...

I don't know if their shipping prices are reasonable, but I get all my nuts from clnf.org.

FYI - BJs is probably about the same price as clnf.org after shipping is accounted for and I didn't need to buy 100# :lol:

so I made another batch of almonds.  i'm still using a little bit of cumin in addition to stains recipe above.  i also replace 1/3 of the regular paprika with smoked paprika.  I think next time I'll try 2/3 smoked and increase up to full on smoked paprika if I decide that's what I'd like.
