I don't have a local source for Pale Chocolate and really have no other reason to place an order online. So what could I sub for it? Is there a combination of chocolate and victory or aromatic or just cut back on the chocolate? Any ideas would be appreciated.

Nothing that I'm aware of. Maybe you could try toasting some malt past the brown stage. I've never taken toasted malt that far before so I couldn't even offer a suggestion on how to do that. If it was me, I'd now have a reason to place an order. :) You can always find a few other things that you need. Some gypsum, whirlfloc tabs, tubing, caps, hops, yeast, books, fittings.

I agree, depending on the recipe you could just sub in regular chocolate. I also agree with Mtn that there is no real substutte for it, I like to keep both on hand and I am lucky my local guy always has it in stock.

In that recipe it's mostly there for color so maybe just an ounce or two of plain chocolate malt.

What about a couple oz of midnight wheat? I want to use some of that for a black IPA but doubt I'd use a full pound.

For color I think that would work just fine.

Yeah, that would be fine. I'd go with just one ounce though. That stuff is pretty dark.

I would actualy add less at first and then see if the color is where you want and then add more if needed.

True, Pale Chocolate is about 200-250 I think and Midnight Wheat is 550.

i agree - use something not too roasty and get it to the color you want. i think i'd probably use regular chocolate at a lower percentage.
