Invy, Yes, hilararious. I do have the book out while it's proofing, but maybe I need to have it turned to a more exotic, French Bread or something... not left on the Rye Bread Page.I've got the jar of Rapid Rise by Flieshmanns... I went with what I thought was a longer 2nd rise this last time, and one of the loafs did get close to doubling, only to fall.Maybe I didn't devolop the gluten enough.. I think next time I'll go even longer on with the dough hook.. it's calling for 4 minutes.. I'll let 'er rip at 6 minutes and give that a try, as well as keeping it warm.

Think of the yeast like beer yeast.... make them happy. Certain things work for certain breads.
