It's a 5 gallon batch and honestly - I'm impressed with the lutra. I couldn't bring myself to not have a starter, so made one on Wednesday, and it kicked off within an hour with a lovely white frothy top, and the starter was completely inert after 24 hours ... 

 

The recipe is an experiment really - super simple and like the starter, the 5 gallons kicked off within an hour and blew the airlock off around the 3 hour mark. It's bubbling politely now, and looking a lot like it'll be done and dusted in a couple of days.

 

If it lives up to the hype about clean fermenting, I'm sold.

One thing I do notice is that when I have used lager yeast in the past, there's been a LOT of sulfur smell around it - ale yeasts (at least the ones I used, West Coast and English, along with French saison and Belgian abbey) just smell ....yeasty. So does Lutra which I guess makes sense cos it IS an ale yeast....

OK, so the primary seems like it's done, but I simply can't leave that lovely cake of yeast without doing something with it - so I have the makings of a baltic porter coming.... 

 

Also - I think it was here that I first heard of Ritebrew - thank you whoever tipped me off because it is significantly cheaper than anywhere else I have found... :cheers:

I need to brew something with kveik to take advantage of the summer heat. It was a bit of a pain using Verdant yeast the other day. My ground water only chills to the mid 80's, so I had to chill my wort in the fridge for a few hours.

Yep, had to do that a few times myself.

I recently went back to bry97 after using a lot of verdant and it was a nice change of pace.

Well, the Vienna lager was racked today (I admit to leaving it longer than I would have because shit happens) and ...you know what? It was fine. It's clean, slight carbonation and maybe a little cloudy but honestly if I crash cooled it and carbonated it I reckon all my pals would drink it no questions...

 

I pulled a pint of yeast off for the fridge, and I'm currently 20 minutes into the baltic porter boil to drop on the rest of the yeast....
