Make the cheese filling - dogs optional. This will make more filling than the dough recipe above. Just freeze the rest.
- 15 ounces ricotta cheese
- 16 ounces fresh buffalo mozzarella, shredded
- 1/2 cup grated Parmesan
- box frozen spinach, drained
- 1 egg
- salt and black pepper

I happend to just find a raviolo mold that we got as a wedding present, 5 years ago, over the weekend. Looks like I know what I will be making next weekend. Thanks for the recipe.
I have seen other recipes that use cake and AP flour to simulate the OO flour that many pasta recipes call for.Cake Flour?

- 1 Multiply the amount of cake flour called for in in your recipe by 0.75. For example; if the recipe calls for 3 cups of cake flour, multiply that by 0.75 for a total of 2.25 cups of flour.
- 2 Measure out the appropriate amount of sifted all-purpose flour and pour it into a bowl large enough to hold it easily. In our example; pour 2 1/4 cups all-purpose flour into the bowl.
- 3 Multiply the original number of cups of cake flour called for in the recipe by 2. For the example, multiply 3 cups by 2 for a total of 6. Add this number of tablespoons of corn starch to the bowl of all-purpose flour.
- 4 Mix the all-purpose flour and corn starch until completely blended. Use this mixture in your recipe in place of the cake flour.
