Goldings, target, northern brewer, dare I say fuggles. Maybe even magnum. What ever you do I say good clean or earthy/herbal just stay away from citrus.

I brewed this yesterday and I think it should be one interesting brew. It went fairly well although I overshot my volume and ended up collecting 8 gal. of wort. After chilling and adding the burnt honey I had 6 gal. in the fermenter and not 5.5 I was shooting for.

Recipe:

14lbs Pale Malt
1lb. Flaked Oats
1lb. Chocolate Malt
.5lb. C-60
.5lb. Roasted Barley
.5lb. Carafa III
.5lb. Lactose
8oz. Roasted Marshmallows

Mashed at 153 for 60 min.

I boiled for 90 min total to try and get my volume down a little.

1oz. Vanguard for 60min. for 21IBU.

2oz. of Cocoa powder at flameout.

I will add 4oz. of Cocoa nibs in secondary.

Now the burnt honey part. I did as Guest said and used 3lb. of honey. It took like an hour to get it to burn so to speak and ended up being a really dark orange-reddish color when done. The wort definitely tastes burnt so hopefully that subdues a little.

All said and done I had 6gal. in the fermenter and aerated for about 5 min. with a wine degasser and pitched my 1084 starter at 64 degrees. This morning its still sitting at 64 and bubbling steady. I did give it another stir with the wine degasser for a few minutes this morning as well. Oh and the OG was 1.096. I should have done a check before I added the honey but forgot so not sure how much that added.

Awesome! I am really interested to hear how this comes out! I especially love the fact that you brewed a 1.096 beer for your wife :frank:

So I racked this to secondary last night and took a sample. Still very strong alcoholic taste. Not much chocolate or marshmallow taste going on right now but it might be covered up by the alcohol. The burnt flavor subdued so that's good. I added 4oz of cocoa nibs that were soaked in 150ml of marshmallow vodka. I'll check it again in a few weeks. Oh and FG was 1.026.

Update: Ok I just got done bottling this. Besides all the additions listed above about a month ago I added 2/3 of a vanilla bean that had been soaked in another 150ml of marshmallow vodka and in that went. This has turned out pretty good. The vanilla bean helped the marshmallow taste slightly. It has a slight roasted/burnt marshmallow flavor I'm guessing from the honey. It is slightly sweet. The mouthfeel is like smooth chocolate milk. It has good chocolate flavor and aroma. It is VERY dark, pure black. It seems sort of slick in the glass and leaves a burnt orangeish layer when poured out of the glass, again I'm guessing from the honey. Very interesting beer. I will give it a month or so and try a bottle and report back when its carbed up. It is very smooth and should make a great dessert beer!

I totally forgot about this beer. I cracked two bottles last night and WOW is it really good. It has been in the bottle for about a year now and has really mellowed out. It is very smooth and you would never know it is a 10% beer. There was about 7-8 of us that sampled it and it went over really well with everyone. No real marshmallow flavor at this point. Some chocolate flavor but not as much as I figured. Just a really good smooth beer right now. I bottled mostly with bombers but I have a few 12oz. I am going to enter into a comp in about a month.
