Help me come up with a recipe,

I already milled 7# of MO and 1# flaked rye. I was thinking to add a half# of crystal and pitch a vial of WLP013 for an ordinary bitter, but now I'm thinking about maybe a pound of RB instead, a small stout. Or, I do have american "IPA" hops and saaz premiant, and more base malt so I could go big pretty easily. Decisions, decisions. This is going to be an overnight mash. Any thoughts? Really jsut a spur of the moment brew and wanted to open it up for discussion, will try to take pics.

I was just having a discusion with a guy in my homebrew club and he often has done overnight mashes and he commented on them making the wort very fermentable. With that in mind I would say go the route of an American IPA since you want a more dry finish to accentuate the hops as well. If you brew an IPA would you pitch the WLP013 yeast as well? I have never used this yeast but just thought I would ask anyways. I would go that route but I am a hophead and love IPA's as well. I am sitting here trying to plan out some beers for the next few weeks myself too. Lagers vs ales. Good Luck!! Look forward to the pictures!!

If I went the IPA or other big beer route I would have to use US-05, 04, or a (very) fresh cake of WLP026, Wyeast 1764, or WLP570. The first two would be cropping from active fermentation, I think. I am on a tear. :covreyes:

A pound of roasted barley in that grain bill might be a bit too much... depends on how roasty you like your stouts!
