1 head cauliflower1 medium onion chopped2 galic cloves1 inch long pice of fresh ginger-graped1 tbls oil2 carrots sliced into rounds1 tbls Curry powder2 tbls Mirin1 can diced tomatoes with juices1 cup vegetable broth1 1/2 cups of cooked chickpeas, (or one can) drainedOptional : 2 tbls rasinsCut cauliflower into florets and set aside.In a dutch oven saute onion, garlic and ginger in oil until soft>about 3 minutes. Add carrots and sauté for 2 minutes.Add mirin, chickpeas, vegetable stock, tomatoes and curry powder.Bring to a simmer.Fold in cauliflower and simmer another 5 minutes until cauliflower is just soft.Serve with cilantro and fresh bread.Serves 4
