I just got a bunch of currants from my garden, and I'm wondering how to make a wine with them. So far I've been reading that I take 3lbs of currants, but I've got more like 10-15 lbs. Each recipe I found talks about hitting the currants with something to kill all the bugs, but couldn't I just throw them all into a bucket and let the natural yeast take care of it?I'm looking for any advice I guess. what do you all think? Thanks!

Jack Keller used to be consider a near deity when it came to fruit wines, or so-called "country style" wines. Try using the search engine on his page for currant recipes. If not, you can likey find something close.https://winemaking.j...r.net/index.asp

No slight intended, I don't know if he's around any more. Blog hasn't been updated in 6ish years. Maybe he just quit his website, but I emailed him a question about two years ago and never got an answer, which didn't happen often.

I don't know. I have it sitting right now. I just gotta give it a try. I opened it up the other day to check it, and it had a nice pectile (sp?) on top. I'm not sure if that's a good thing or a bad thing, but I didn't sulfite or anything, so I assume it will ad some complexity? I guess my tastebuds will tell.

pectile (sp?)

Pellicle? That's probably not good. If it's just the fruit floating up to the top, you're ok.
