I am in Des Moines and just tasted a fabulous oatmeal stout by Samuel Smith, and I was wondering if anyone has made something close to this? I really love this beer!

look up Quiet Storm Stout in the recipe section it is similar and a great beer

i need to give QS another shot. my first time through I didn't use the right yeast I think and it wasn't as good as it could be. i'm a little bit suspicious about the number/amount of specialty malts in that beer but you guys all seem to love it so who am I to say.

I understand that concern. I've not brewed the QS but have done a couple other stouts with a lot of different specialty malts and they came out very nice, complex, but nice and tasty.

Quiet Storm is a great recipe and makes a delicious stout. I don't think it's quite that close to Sam Smith's Oatmeal though. It's been awhile since I've had either, so I could just be remembering poorly. RE: Speciality malts - it does seem like a lot in that recipe and I was skeptical too, but they seem to work well. It does finish high, but has enough hopage to balance the sweetness. It's definitely a meal in a bottle.

Sammy's is heavier, sweeter to my memory, you could approximate that in the QSS by boiling down the first runnings I'd think

more caramelization basically yes, like a reduction in cooking

If you haven't tried the QSS, I would give it a shot as close to the original before messing with it too much. I've brewed it a couple of times and the last time I had a hard time changing anything. If you have a hankering for a manly, gut busting stout, you can't go wrong with that one.
